As you may know, I’m a snack person, so I’m always with food around. For today’s post, I’ve decided to bring a super easy and healthy recipe – Energy balls. They are one of my favourite snacks at the moment because they’re small to carry in my bag, but at the same time super nutritious. This recipe will make 12 balls which means that you’ll be sorted out for a week. The good thing about this recipe is that it’s super flexible in terms of ingredients, you can add any type of nuts and seeds to the mixture (you don’t want to eat the same thing for a month). Hope you like it.
In terms of ingredients, you’ll need 1 cup of dates (remove the stones previously), 3/4 cup of almonds (or any type of nuts), 1/2 cup desiccated coconut, 2 tbsp chia seeds, 2 tsp crunchy peanut butter and 1 tbsp coconut oil (no need to melt it).
Put all the ingredients in a food processor and blend them all until everything is combined and crushed before jumping to the next step.
Once everything is blended, mix some cocoa nibs (totally optional). Add as many as you fancy.
Then comes the fun part, take a tbsp of the mixture and make balls with your hands. You should be able to make 12. After you finish place them in a container inside the fridge for them to get consistency. Leave them overnight if possible. And they’re ready to take with you to school/work.
Since they’re raw I would recommend to maintain them in the fridge as they’ll last longer.
